Cooking Pastured Chicken and Turkey

You will find that cooking our poultry is very similar to what you might already be used to doing, except that you don’t need to use fancy seasonings or sauces to make our poultry taste good, allowing you the option to add them if you like them or leave them off. 

Roasted Chicken or Turkey

We suggest a 2 step process for roasting our poultry. First, place the bird in a very hot oven of at least 400F. Roast your chicken at that temperature for at least 15 minutes, or your turkey for at least 30 minutes, basting it with butter every 5 minutes or so. Reduce oven to 350F and continue cooking until the thigh registers 175F. You can baste it the whole way through cooking to get a very crispy, brown bird but you don’t have to and of course, the more you open the oven, the longer until it is done. Let rest 10 minutes before carving.

Fried Chicken

Frying in lard or tallow from pasture-raised animals is a highly recommended way of making fried chicken as these fats are heat-stable and nutritious, but a high quality vegetable oil with a high smoke point will do just fine. Fry chicken pieces basted in flour, salt, pepper, and a little sugar (optional) at about 350 until internal temperature reaches 175F.

Braised Chicken

Brown the chicken in medium hot oil on all sides and set aside. Saute onions and celery in same oil until tender and remove pan from heat. Add some of your favorite root vegetables to the onions and celery and place the chicken on top of the veggies. Add your favorite braising liquid to the pan (we suggest chicken broth, white wine, beer or simply just water), about 3 - 4 cups, cover and cook at 350 degrees about an hour or until chicken is tender. A large roasting pan or dutch oven works best for this type cooking.

Stewed Chicken

A raw chicken can be cooked in the crockpot or on the stove in water to create a healthy yellow broth-based soup or stew. The skin will become mushy and rubbery but the meat will be juicy and tender. Cook with your favorite veggies in it. Cook until the chicken as done or around 170 degree internal temperature.
